I cool smoked this pork fat so that it can be rendered on an as needed bases. We use it to fry eggs, flavor fried rice and start the base to Pastele Stew. There are quite a few opportunities to use it.
Last night I fried the smoked slices of the pork butt and eggs with the rendered smoked fat. The bowl, built from the bottom up: Sticky White Rice slathered with Adoboloco Jalapeno Mild Hot Sauce, Chopped & Fried Smoked Pork Butt mixed with fresh green onion right before you take it out of the pan and the final touch is the sunny side up egg fried in the rendered smoky pork fat with black pepper… Stack and serve hot.
