Smoking peppers and a variety of different foods is a passion of Tim’s (Adoboloco co-founder). All of the smoked peppers in our sauces are smoked in-house by Tim & Xander Parsons. We never use liquid smoke, canned smoked peppers or additives to fake that authentic flavor, you can taste the difference. It’s all natural hardwood smoked, low and slow in a custom designed and built pepper smoker/roaster. The original smoker Tim built for peppers was made out of a 55 gallon drum, then scaled up to a in-ground concrete smoke house under a wood-burning oven he built. Now we’ve scaled up to a custom smoker we designed and had built just for our chili pepper smoking.
