🌟 Ingredients:

• Skin-on salmon fillets (one for each person)

• Chopped kale

• Salt

• 1-2 TBLS oil of choice and/or butter

• Fresh Lemon

🔪 Instructions:

★ Sauté the Kale: Heat oil or butter in a pan over medium heat. Sauté the chopped kale until soft and tender. Squeeze some lemon juice over the top and salt to taste.

★ Prep the Salmon: While the kale is cooking, remove the skin from the salmon fillets and lightly salt one side of the skin. Set aside.

★ Cook the Salmon: Add the skinless salmon to the oiled pan. Cook over medium heat until the internal temperature of the salmon reaches 120°F (about 15 to 20 minutes).

★ Crisp the Salmon Skin: While the salmon is cooking, add a thin layer of oil to a small pan over medium-high heat. Once the oil is hot, add the salmon skin and cook until crispy.
